Chang's is a China Bistro that specializes in fresh food, attentive service, and attractive atmosphere.  All of the restaurant locations are company owned and each location varies in atmosphere.  Locally, the old Grady's American Grill at Kingston Pike and Papermill Drive has been converted to P.F. Chang's.  The business is easily identified by the two large stone horses at the entrance to the restaurant.  Inside you will find a small waiting area and the bar located to the right of the restaurant.  The dining room is some- what open with subdued lighting along with natural light from the windows.         After being seated, your server will explain the bistro concept.  No salt is served in this restaurant.  Three shakers are brought to your table.  One is dark, which contains soy sauce--your source to add a salty taste to your meal.  One is red, which contains a light peppery sauce and one is clear, which is explained to be the neturalizer.  Each person may order an entree (Beef & Broccoli, etc.) which is brought to your table on a platter.  A large bowl of either white or brown rice is placed for all to share.  The wait staff suggests that you and your party order different entrees so you may share from each platter (of course this is not required).  A large number of hot teas are available and brought to your table in an individual tea pot.  Traditional Ice Tea and soft drinks are also available along with Chang's extensive wine selection.  Full service spirits are also available.  Dessert selections are also on a grand scale.  The "Wall of Chocolate" is more than enough for two to share. Expect to wait up to one hour during peak serving times.  Telephone call-ins are accepted to be placed on the waiting list.  You must be present when your name is called.
