Served with syrup and garnished with fresh seasonal fruit. 10.99 Born in Knoxville by a group of U.T. students, the original restaurant opened on Twentieth Street and Cumberland Avenue.  The location is now home to a different restaurant that is unaffiliated with RT.  As with many other locations, Ruby’s has distanced themselves from the restaurant of yesteryear and has adapted to an aggressive restaurant concept that will not tolerate average or below profit.  A corporate move from Alabama to Maryville, Tennessee brought a new cooking academy and training facility and a new home to Ruby Tuesday.  Today’s Ruby is an aggressive business.  In the early 2000’s a Ruby Tuesday was going up on every major street corner in the Knoxville area.  The chain was as prevelent as CVS and Walgreen’s.  One concept is not enough, we have always been told to diversify and that is exactly what RT’s has done.  Ruby’s has operated a number of different restaurants, mostly failures but to include Tia’s Tex-Mex, L & N Seafood Grill, Silver Spoon Grill, Mozzarella’s Cafe, Jim & Nicks BBQ and recently acquired Wok Hay and a start up restaurant of their own Marlin & Ray’s.  Regardless, if the quarter ends on a sour note, Ruby’s will react by drastically changing their menu, decor, and target menu items.  The chain, originally clad with red & white table cloths-the RT we 1980-90’s people remember has changed to the brown-tan, black, white plated offerings of todays Ruby Tuesday.  Since it’s introduction the salad bar or garden bar has remained above average for the most part.  Some locations that are less traveled have some bad ingredients on the bar which might tend to sting the tongue and tighten the stomach. While Ruby’s does well, the corporate management will not the chain gain an identity.  The menu has no signature items that are more than 6 months old.  Aggressive driving is a quick recipe for disaster.  The only thing at RT’s that is more than two years old is the salad bar.  It’s time to slow down, settle on some signature recipes and keep them there.  If corporate meetings are necessary, don’t discuss whats going on in the dining room, let it be for a few years and establish an identity for RT along with some signature offerings that you will be known for 10 years from now.  STOP changing yourself every four months.  Sandy STOP it!
