There are three businesses that you will find on almost every thoroughfare
in Knoxville, CVS, Walgreen's, and Ruby Tuesday. Within the past
year, RT has started closing all of the central Knoxville locations.
RT responds to their market on a quarterly basis and the menu tends to
drastically change on a quarterly basis. RT is in constant search
of their target audience. However, with the changing menu and closing
of vital locations, the company may never find it's niche in this dining
environment. The original Ruby Tuesday started
in East Tennessee, with a location on the UT Strip on Cumberland Avenue
and a location in the L&N Depot downtown. Both locations have since
been closed, but the chain has saturated the Knoxville Metro market with
locations (which it is slowly closing several locations with the expiration
of leases). Ruby's is now based out of Downtown Maryville with a
training "university" and headquarters located there.
The chain has reinvented itself several times and the newest campaign is just simple American fare which includes their large selection of burgers. If you will note there are several Asian selections on the menu which disqualifies Ruby's as "Simple Fresh American Dining". This discription of "Fresh American Dining" is quite insulting to a true American. Also note that the chain overhauls it's menu every quarter due to major market losses. Ruby's attempts to adjust to the market flucuations but fails in most categories to attract new customers due to it's change of venue every three months. Ruby's still has a very attractive salad bar, which tends to be the best offered at any chain restaurant, however, onsite reviews have found salad bars to be filled with spoiled creamy salads, frozen pickles, wilted three day old lettuce and deceitful billboard advertising.
The company has started a down-sizing campaign and will close 40 restaurants
over the next couple of years. According to the company, it's not
unusual for them to close several restaurants a year and that is because
of expiring leases and relocation of the restaurants. As noted, the
chain changes the menu on a quarterly basis and this website will attempt
to keep the major items up-to-date. A restaurant chain that is in
despair with temporary success but ultimately long term failure.
